Do you and your partner cook special meals together at home?
Confession: Since becoming a parent over a year and a half ago, my husband and I have only hired a babysitter once, out of necessity when we both had work commitments one evening. We rarely go out to restaurants on date nights! We’ve definitely done it, but only when family or friends have offered to babysit free of charge.
The sitter we used was great and our daughter responded really well to her, but we’re just not sure that hiring someone is worth the cost for an evening out when we really enjoy eating special meals at home.
So with Valentine’s Day coming up, I’m pretty sure we’ll stay in. Whether I cook seafood or steak for our special dinners (stay tuned for some of those recipes) we often end the meal with these dark chocolate mug cakes. Don’t let the olive oil fool you – these are definitely a treat! But what I love most about the recipe is that it’s just for two small cakes. No need to have a huge batch of a rich dessert around tempting me for the rest of the week.

I also love that I can make them with ingredients I almost always have on hand and they’re SO simple. Just mix and microwave! Although my date night dinner recipes are usually pretty simple, too, I definitely don’t want to spend much extra time in the kitchen when I could be relaxing with my hubs.

Dark Chocolate Olive Oil Mug Cake
- 2/3 cup milk I used whole
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 cup sugar
- 2 tbsp olive oil
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp chocolate chips optional
- Whipped cream optional
Add all ingredients except whipped cream to a mixing bowl. Stir until well combined but do not over mix.
Divide mixture between two mugs.
Microwave the mugs separately for 90 seconds each. Watch the mugs carefully and stop the microwave if the cake looks like it's about to spill over -- it's done.
Top with whipped cream, if using, and serve immediately.
