Cheater’s Shrimp Stir-Fry

1 lb frozen shrimp, thawed

3 tbsp olive oil

16 oz. frozen stir-fry vegetable blend*

16 oz. frozen broccoli**

1/2 cup prepared teriyaki sauce (more to taste) OR make sauce below:

1/3 cup low-sodium soy sauce

1/3 cup water

1 tbsp cornstarch

2 cloves garlic, minced OR 2 garlic dots

1 tbsp Sriracha sauce (more or less to taste)


1Preheat oven to 400F. Line a baking sheet with foil and spray with cooking spray.

2Drain thawed shrimp and distribute evenly on baking sheet. Bake for 7-8 minutes.

3Meanwhile, heat olive oil in a large pot or frying pan on the stovetop.

4Add frozen vegetables and sautee until heated through.

5Add prepared teriyaki sauce OR combine soy sauce, water, corn starch, garlic and Sriracha in a small jar. Shake to combine throughly, then add to vegetables and cook 2-3 minutes until sauce thickens.

6Add cooked shrimp to vegetable mixture, stir to combine.

7Serve over rice with additional Sriracha sauce as desired.

*I used Trader Joe's Pacific Shores Stir-Fry Vegetables

**Or two 16 oz. bags of stir-fry vegetables. We just really like broccoli around here.
