Shredded Chicken Tacos

  • 1-2 cups seasoned shredded chicken
  • 4-6 6- inch soft corn tortillas
  • 1 bunch cilantro
  • 1 cup cherry tomatoes
  • 1/2 small onion
  • Sour cream optional
  • Hot sauce optional


  1. Chop the cilantro, onions and tomatoes (do this the night before if you remember and have time).
  2. Warm the shredded chicken, either on the stovetop or in the microwave.
  3. Heat a dry cast iron or stainless steel pan on the stovetop. Warm the tortillas for 30 seconds on each side. Alternatively, warm the tortillas using the microwave or oven.
  4. Set everything out on the table and let your diners build their own tacos (assisting toddlers when necessary, of course!)

Recipe Notes

I usually heat up six tortillas. My husband eats three tacos, I eat two and the toddler eats one.
